HOW TO MAKE A HEALTHY MAYO BASED "Chicken or Seafood" Salad

Have you ever ordered chicken salad? Or egg salad?

I'm talking about the mayonaissey kinds! Usually full of well mayo and SUGAR!

Did you see my Instastories from last night?

I made my classic salmon mixture with a healthy mayo substitute and then a mahi mahi version.

And since the sugar detox is still going, this is a great formula to have on hand and one of my favorite go-tos.

>>Get a VEGAN mayo substitute: I use Primal Kitchen, the egg free one

>>Find your best sourced protein (talking chicken/fish here) so wild caught fish/seafood or organic chicken

The top proteins that work well in this are:

*Organic Chicken

*Wild caught salmon (I get canned packed in water)

*Wild caught shrimp/baby shrimp

*Wild caught crab (fresh lump meat)


*VEGAN option: jackfruit

>>Add extra veggies: my top picks are finely diced cucumbers, celery and then some chopped greens (or put entire mixture over greens into a salad like in this photo)

>>Flavor enhancers: black olives, capers, artichokes, mustards, pickles

>>Fresh herbs: finely chopped parsley, dill or cilantro

>>Pink himalayan sea salt

>>Optional FRUIT: mangoes, grapes, apples

* 1 can wild caught salmon (in my second batch I used wild caught mahi mahi filets, cooked in air fryer (you can bake/poach/steam)

* 2 TBSP capers

* 3 artichoke hearts diced

* 1 cucumber, finely chopped

* Organic cilantro, chopped

* 1 spoonful vegan mayo

* Pink sea salt

* 2-3 TBSP stone ground mustard

* (Mahi recipe) 1/4 cup chopped mangoes

* 1 head of romaine lettuce chopped

* Served with 1 toasted Mikey's english muffin


1. Open salmon, rinse, add to dish and fork apart

2. Add mayo, capers, diced cucumber and chopped artichokes (also from a water packed can)

3. Squeeze in mustard, mix all together

4. Rinse and then finely chop cilantro, add to dish

5. Wash romaine and chop, add to a bowl

6. Toast english muffin (I used air fryer)

So good on lettuce wraps, grain free wraps, salads or on a healthy gluten free bread option. Tag me if you make this or your own version using my formula!
