Watermelon Mint Smoothie


It's definitely watermelon season! By this I mean you can find good seedless watermelons in the grocery stores that are bright pink inside and super tasty (and not cost $10 for a small container). I had a big watermelon that I finally got around to chopping up and ended up with so much that I had a huge container in the refrigerator in the basement and another one in my kitchen. I wanted to find a way to use some of the watermelon up so I thought, why not toss it in my smoothie? A perfect new blend of fruits and veggies that tastes like summer.  

Here's what I mixed together:

  • About 2 cups watermelon cubes
  • 1/2 english cucumber
  • 2 limes (no skins)
  • Handful of fresh mint
  • Splash of flax milk
  • 1-2 cups of power greens (mix of chard, spinach, baby kale)
  • Water
  • 1 Tbsp chia (Mila)

I added the greens to my Vitamix first with water and blended those up. Next I added everything else and then tasted it along the way to see if I needed more cucumber or mint until it was a burst of freshness in my mouth!
