How to make the BEST Nicoise salad (vegan OR salmon!)

Niçoise salad 🥗 my favorite ever! This is the #vegan version but I also love it with wild Caught salmon (always wild caught people do not eat farmed fish)

I made the salmon in my air fryer and it turned out so so well! Way easier than my grill pan and less dishes! 

I made the potatoes 🥔, red onion, and salmon in the air fryer! Warm it up for about 5-10 minutes, heat to 350 F and then go!

INGREDIENTS:
* Fennel
* Spinach 
* Green beans
* Red onion
* Potatoes 🥔 
* parsley 
* Tomatoes 🍅 
* Roasted sea salt chickpeas
* Salmon (optional)
* Artichoke hearts 💕

DIRECTIONS:

  1. Wash little potatoes and cut into halves or quarters, I used organic b sized a blend of white and yellow

  2. Add to air fryer once warmed up, if you don’t have one, buy one OR use your oven and a cooking sheet at

  3. 375 F and spray with olive oil or avocado oil and salt

  4. Let the potatoes cook or ‘fry’ for about 20-25 minutes or until browned, and then remove and let cool, add in about 1/3 of a medium red onion thinly sliced (this cooks in about 10 minutes)

  5. You can add the salmon at the same time if going with the animal protein version or just omit for vegan. Feel free to cook salmon on your stovetop or in the oven if you are using that for your potatoes. I literally used zero seasonings in my air fryer but if using oven, I’d use salt, and mabye lemon juice and dried parsley

  6. Wash fennel bulb, cut off bottom end piece and chop right above the top of the white part where the little stems start. The outer shell will come off. Cut the remaining into halves, then quarters and finely slice

  7. Add spinach or other greens to your large bowl, season with salt

  8. Slice up 4-5 small tomatoes into quarters

  9. Artichoke hearts: I buy organic frozen hearts and put them in my fridge so they thaw so I did nothing to these!

  10. While roasting veggies, boil water in a saucepan and add a steamer basket to the top and steam green beans for about 5 minutes or until cooked through (I buy frozen organic green beans from Costco)

  11. Layer your tomatoes, onion, potatoes, green beans, artichoke hearts over spinach.

  12. Chop up a large handful of fresh organic parsley and add to bowl

  13. Add salmon if using OR add in extra hummus

  14. Top with roasted sea salt chickpeas (I buy Saffron Road)

  15. Season with more salt if you like, and I used Primal Kitchen Green Goddess Avocado dressing!
