Plant Based Lemon Blueberry Pancakes!

Oh hey hey!

Dalton and I are back with a new fun family pancake recipe! This one was inspired by a little photoshoot I did with Truvani using their vanilla plant protein powder, but you can totally make these without if you like, I just LOVE the vanilla flavor plus their super super clean ingredients (only 5!)

This is pretty much how I get recipe ideas, I see one food on the counter, in my fridge and I build a recipe around THAT. So I saw a cut lemon on the counter, Dalton said let’s do a pancake recipes and voila!

I made these over Labor Day weekend while Dalton was ‘helping’ me aka playing with all the teaspoons in the sink and spraying water all over and Dash kept tipping over and crying so if I can do a photoshoot and make pancakes with that going on, you all can eat healthy too :)

So here it is:

Ingredients:

  • 2 ripe bananas, smashed

  • ½ cup unsweetened almond milk

  • 3 TBSP mila (with 7-8 TBSP water to gel)

  • 1 lemon, juiced

  • 1 TBSP maple syrup

  • ¼ cup coconut flour

  • 1 cup organic oats, blended into flour

  • 1/2 scoop of Truvani vanilla plant protein powder

  • 1 tsp baking powder

  • ½ tsp baking soda

  • Salt

  • ⅓ - ½ cup fresh organic blueberries

Directions:

  1. In a small bowl, smash ripe bananas with a fork until creamy

  2. In another small bowl add chia and water, stir lightly until gelled

  3. Add 1 cup organic oats to a blender/Vitamix and pulse into a flour

  4. Add all dry ingredients to a large bowl

  5. Add the remaining wet ingredients to bananas and then add all wet ingredients into the dry and stir to combine (I added the almond milk slowly until the texture was the consistency I wanted)

  6. Once you have the batter combined, add as many fresh blueberries as you like

  7. Heat a pan over medium/low heat and add coconut oil to melt then add a cookie scoop size and slightly spread out with the back of the scoop, cook for a few minutes each side until lightly browned.

  8. Top with bananas, maple syrup and more blueberries if you like!

NOTE: these pancakes are a bit thicker because Dalton likes to eat them like ‘cookies’ :) 

How to substitute:

**If you are nut free, swap flax, oat or another dairy free milk for almond

**If you are coconut free, use avocado oil and swap the coconut flour for cassava
